Sappenfield is a native of Parke County Indiana, currently residing in Franklin. She graduated from Franklin College in 2002 with an accounting degree. While at Franklin, Sappenfield participated in track and cross country. She is married to Jake Sappenfield, also from the FC class of 2002, and together they have a daughter named Emma.

Sappenfield is active in many organizations including: the Indiana Student Financial Aid Association (ISFAA), Association of Student Financial Aid Administrators (MASFAA), National Association of Student Financial Aid Administrators (NASFAA), Johnson County Girls Inc. (board member), Tri Kappa sorority and she serves as the staff advisor at FC for Pi Beta Phi sorority at FC.

In her spare time, she enjoys running, watching almost any sporting event, being outdoors and spending time with friends and family.
